Here’s a seriously healthy twist on Billy Madison’s favorite snack! This low-carb pudding is made with chia seeds which have similar health benefits to the popular superfood, flax seeds. This yummy pudding is perfect for an energizing morning breakfast or maybe a guilt-free late night snack. However, it doesn’t matter when you choose to eat the pudding, we can assure you it’ll taste just as sweet. Enjoy!
INGREDIENTS for Chocolate Chia Pudding:
3/4 cup almond milk
2 tsp maple syrup or honey
3-4 tbsp chia seeds
1 tbsp cocoa or cacao powder
1/2 cup coconut and blueberry (optional)
Pour almond milk, maple syrup (or honey), chia seeds, and cocoa (or cacao) powder into empty jar
Stir ingredients until there are no lumps
Refrigerate for at least 6 hours or overnight
Add toppings (optional)
